Ovum, Pink Salt 2023

Established in 2011 by husband-wife duo Ksenija & John House, Ovum was founded in hopes of producing Oregon white wines that are honest reflections of time and place. Their low intervention production method is a commitment to letting the wine and vineyard shine, not the winemaker: at Ovum, fruit comes first. Pouring a delicate pink hue, this organic rosé from Oregon's Dundee Hills is crafted entirely from Cabernet Sauvignon grapes. On the nose, it offers enticing aromas of juicy apricots, blackberries, cherries, and a subtle hint of rose. On the palate, these fruit flavours are complemented by a salty, spicy note that lingers on the finish, adding complexity and intrigue.
